WINE FROM THE LAND OF CASTILLA

Varieties: Cabernet Sauvignon and Merlot.

Aging: 12 months in French oak barrels. After 24-48 hours in chambers at 5-7ºC. The grapes are then destemmed and a conveyor belt transfers them to a 5,000-liter tank. Fermentation is carried out by autochthonous yeasts, which have been identified and selected in all the vineyards in order to obtain a bank of their own. Malolactic fermentation takes place in the tank after racking.
