All our cheeses are made with raw milk exclusively from our own raja Manchega sheep breeding.
Our livestock is made up of 5,500 sheep of the Manchega breed, which are the unique basis for the production of the artisan cheese Dehesa de Los Llanos. The
The herd’s feed consists mainly of pasture, crops and aromatic herbs from the farm itself. We are fully aware that a good diet is the basis for producing quality milk.
In addition, the cattle are housed in excellent conditions. The different sheds in which they are distributed are equipped with modern ventilation and sanitation systems. These conditions, together with a rigorous sanitary control, result in excellent milk.

Livestock farming has also been the subject of important innovations and technological advances. Dehesa de Los Llanos was the first sheep farm in the world to introduce integral electronic identification of sheep, so that a personalized history per head can be obtained and controlled, including its feeding and health, essential requirements to improve the flock and to ensure traceability to establish continuous improvement processes.
