It is an artisan Manchego cheese made from raw sheep’s milk, Denomination of Origin and has a minimum curing time of 9 months that has dazzled chefs such as Ferrán Adriá or Berasategui.
This artisan manchego cheese, with Denomination of Originis made from Manchego sheep’s milk (raw). Its rind is naturalformed by the cheese paste itself. The personalized treatment (since each cheese passes at least ten times through the hands of the artisan) and its minimum curing period of nine months greatly limit production and make it a gourmet cheese.
All our cheeses are made without egg-derived lysozyme. Likewise, all our cheeses are lactose-free, additive-free and preservative-free.
In November 2012, Dehesa de Los Llanos Gran Reserva cheese was recognized as the World’s Best Cheese at the World Cheese Awards, the sector’s most important international competition. More than 2,700 cheeses from all over the world competed in this ranking, which was evaluated by 255 judges.
